Description
This pasta dish has bacon, eggs and ham as ingredients, so it makes the perfect breakfast/brunch dish! It also makes a wonderfully delicious lunch or dinner as well!
Ingredients
- 3/4 lb. thin spaghetti
- 4 slices apple wood smoked bacon
- olive oil
- 2 cloves garlic, minced
- 1 cup ham, chopped (leftovers are good)
- 4 eggs, beaten
- 1 c. grated Parmesan cheese
- large handful chopped parsley
- salt, to taste
- coarse, freshly ground pepper, to taste
Steps
- Cook pasta in salted water until just al dente.
- Meanwhile, cook bacon in a large skillet until crisp. Add ham and garlic and saute for a few minutes. Add a little olive oil if the bacon didn't render much fat.
- In a small bowl, mix the cheese into the beaten eggs, and grind in some black pepper.
