Use this as a dip or as a cheesy topping on your favorite Mexican dishes. It is creamy, smooth and just spicy enough to make you keep wanting more.
1/2 lb. white American cheese, roughly chopped into 1 inch pieces
2 T. chopped green chiles, frozen or canned
1 T. pickled jalapeno slices, finely diced
1 T. juice from the pickled jalapenos
1/3 c. milk
1/4 c. water
dash cumin
Combine all ingredients in a medium sized glass bowl. Microwave for 5 minutes, stirring every minute.
At first the dip will be watery, but thickens as it finishes cooking. Serve it hot, over taco salads, chimichangas, enchiladas, or anything Mexican, or just use as a dip with your favorite chips or veggies.
