This recipe is so easy, you will never want to make pork chops any other way. Just put all ingredients in the crock pot and forget about it. It is so delicious, it will wind up on your recipe meal rotation.
3-5 lb. boneless pork chops ( cut 1 inch to 1 1/2 inch thick)
1/2 c. light brown sugar, packed
1/2 c. ketchup
1/4 c. low-sodium soy sauce
1-3 T. red chile paste, or to taste
1 t. minced garlic
1 t. black pepper
1/2 t. Kosher salt
1/4 c. cornstarch
Place a crock pot liner in the crock for easy clean up. Spray liner with a non-stick cooking spray.
Layer all ingredients except for the cornstarch in the crock pot in the order listed, starting with the pork chops. Stir and cover. Cook on low 6 hours.
Combine equal amounts of cornstarch and water in a jar. Close lid. Shake it until well mixed. If there are lumps, stir and break them up with a fork. Add to the sauce. Stir. Cover. Continue cooking for 1 hour.
