There is no need to fry chicken to get it crispy. Baking is healthier for you and tastes just as good.
6 -8 chicken thighs, with bones and skin
2 T. olive oil
1 t. kosher salt
1/4 t. freshly ground black pepper
ground paprika and/or granulated garlic, optional
Preheat oven to 400 degrees. Line a large baking tray or half sheet pan with foil.
Place all chicken on baking sheet, skin side down. Sprinkle with salt and pepper. Turn over each piece skin side up ad drizzle about a teaspoon of oil over the skin on each piece of chicken and rub lightly to coat. Sprinkle with salt and pepper.
Bake for 1 hour, until the skin is golden brown and crisp.
Remove from oven and let rest about 5 minutes before serving.
