Do you need a special sandwich for that football game get-together, party or just a regular lunch? Then make these little jalapeno chicken slicer gems and make everyone happy.
2 t. vegetable oil
1 large jalapeno pepper, seeded and diced finely
1 garlic clove, minced
4 oz. cream cheese, room temperature
1/4 c. sour cream
2 c. shredded rotisserie chicken
1 c. shredded Monterey Jack cheese
8 slider rolls, split in half
1 c. Panko breadcrumbs
3 T. butter, melted
1/4 c. cooked and crumbled bacon
In a saucepan, heat oil over medium heat. Add the jalapeno and sautee for 1-2 minutes. Add the garlic and cook for 30 seconds.
Reduce heat to low, add the cream cheese, stir until cream cheese has melted. Stir in the sour cream, add the chicken and stir to coat. Quickly stir in the cheese and remove from the heat.
Rolls:
Place the Panko breadcrumbs on a plate. Brush the cut side of the rolls with melted butter and press each roll onto the crumbs and then place the roll crumb side up on a cooking sheet. Broil for 1-2 minutes or until crumbs turn golden brown.
Use about 1/3 cup of the chicken mixture for each roll. Top with crumbled bacon and serve.
