Description
Instead of making the traditional Greek gyro sandwiches with lamb, try chicken instead. The chicken, along with the fresh and exciting flavors will satisfy your taste buds.
Ingredients
- 2 lb. boneless, skinless chicken breasts
- 1/4 c. extra virgin olive oil, plus more for brushing
- 1/4 c. lemon juice
- 3 T. plain Greek yogurt
- 1 T. red wine vinegar
- 1/3 c. chopped red onion
- 2 cloves garlic
- 1 1/2 t. dried oregano
- 1 t. dried thyme
- 1/2 t. coriander
- salt, to taste
- freshly ground black pepper, to taste
- 6 - 8 Greek Pita Flatbread, homemade or store-bought
- Tzatziki sauce, homemade or store-bought
- diced Roma tomatoes, peeled and diced
- cucumbers, chopped
- Romaine lettuce
- diced red onions
- feta cheese
- cilantro
- Kalamata olives, optional
Steps
- Marinade:
- In a mixing bowl, whisk together olive oil, lemon juice, yogurt, red wine vinegar, chopped red onion, garlic, oregano, thyme, coriander, then season with salt and freshly ground black pepper, to taste.
- Place chicken in a gallon ziploc bag, pour marinade over chicken, seal bag while pressing out excess air and transfer to refrigerator to marinate between 2 - 4 hours. Remove bag of chicken during the last 30 minutes of marinating to rest at room temperature before grilling (leave in marinade).
