Enjoy this restaurant quality fried chicken in the comfort of your own home. You don't need a deep fryer, just a skillet, ingredients and a little time to make this delicious meat dish.
1 whole chicken, cut into pieces
3 beaten eggs
4 T. oil
Coating:
2 c. flour
4 t. paprika
2 1/2 t. salt
1 t. pepper
1 t. poultry seasoning
1 t. thyme
1 t. oregano
1 t. tarragon
1/2 t. garlic salt
1/2 t. onion salt
1/2 t. celery salt
ketchup, optional
Sift together all coating ingredients; place in a clean ziploc bag. Coat each chicken piece first with beaten egg, then with flour mixture in the bag. Be sure to coat each piece completely with the flour mixture.
Heat oil in a skillet. Brown chicken in oil slowly, uncovered. When browned, cover the skillet and keeping frying on a very low heat until the chicken is fully cooked.
Place on paper towels to drain off the excess oil.
