Creamy Burrito Casserole

Description

Any family who loves Mexican food will certainly love this delicious dish. It is extra creamy with the refried beans, cheeses, sour cream and cream of mushroom soup.

Ingredients

1 lb.lean ground beef
1/2 onion, chopped
1 pkg. taco seasoning, your choice of mildness or hotness
6 large flour tortillas
1 can refried beans
2 -3 c. shredded taco cheese, Mexican cheese or cheddar cheese
1 can cream of mushroom soup
4 oz. sour cream, plus extra for garnish
green onions, black olives and/or jalapenos for garnish, optional

Brown beef and onion together in a skillet; drain.

Add taco seasoning and stir in refried beans.

Preheat oven to 350 degrees.

Mix soup and sour cream in a separate bowl.

Spread 1/2 of the sour cream mixture in the bottom of a greased casserole dish. Tear up 3 tortillas and spread over sour cream mixture. Put 1/2 of the meat and bean mixture over that. Add a layer of cheese.

Repeat the layers.

Sprinkle cheese over the top and bake, uncovered, for 20-30 minutes.

Serve hot. Garnish with sour cream, green onions, black olives and/or jalapenos, if you would like.
