This 5 ingredient chicken wrapped in bacon dish is packed with flavor and is easy and quick to make. Serve with a baked potato and a salad for a wonderful meal.
1 lb. boneless, skinless chicken breast
8 slices thick pepper bacon or bacon of your choice
2 T. olive oil
2 t. dried thyme
1 t. garlic powder
toothpicks, soaked in water
Cut chicken breast into 1 inch thick slices.
Cook bacon, slightly, not crisp but light brown.
Divide chicken strips into four equal parts.
Lay a bacon strip on top of each chicken piece and roll up with the bacon on the inside.
Hold pieces together with toothpicks.
Drizzle olive oil over tops and bottoms then sprinkle with thyme and garlic powder.
Grill over medium heat until chicken is completely cooked, usually about 5 minutes on each side.
