This wonderful main dish is a variation of macaroni and cheese, but with one whole cauliflower to boot! Now the kids can get their veggies and mac n cheese at the same time!
1 whole cauliflower
8 oz. pkg. mild cheddar cheese
3 oz. shredded Mozzarella chese or Parmesan cheese, divided
1 1/2 c. milk
1 c. cream
1 t. cornstarch or flour
8 oz. pasta - penne, bow tie, spirals, shell, macaroni, spaghetti, etc.
salt and pepper, to taste
Cook pasta half the recommended cooking time. Drain and set aside.
Preheat oven to 350 degrees.
Break down whole cauliflower by snapping or slicing off florets. Set aside.
Add 1 heaping teaspoon cornstarch or flour into 1 1/2 cups milk, and whisk. Pour into a greased 2 quart casserole dish or ovenproof pot.
Add a cup of cream or milk.
Add half of the pasta, cauliflower and cheese mixture, saving 1/2 cup Mozzeralla and/or Parmesan as a topping. Mix, then add the remaining mixture. Lightly season with salt and pepper. Mix again and sprinkle the saved Mozzeralla and/or Parmesan cheese as a topping.
Cover. Bake for 30 minutes. To finish, remove the cover, brown for 10-15 minutes.
