This delicious casserole is very versatile. It can be eaten as is, served on top of or on the side of pasta, or in a meatball sub sandwich.
1 lb. ground turkey or lean ground beef
1 egg
1/2 c. plain bread crumbs
1 T. Italian Seasoning
3 T. grated Parmesan cheese
1/2 t. garlic powder
1/2 t. kosher salt
6 cranks freshly ground black pepper
Casserole:
1 - 24 oz. jar spaghetti sauce
1/2 c. Parmesan cheese, shredded
1 c. Mozzarella cheese, shredded
Optional: your favorite pasta, cooked or rolls for a sub sandwich
Preheat oven to 425 degrees.
Meatballs:
In a large bowl, mix together meatball ingredients until combined evenly. Roll into 40 one and one half inch balls. Space evenly on greased baking sheet.
Bake for 20-25 minutes. Lower oven temperature to 375 degrees for the casserole.
Casserole:
Pour half of the spaghetti sauce in bottom of a 2 qt. baking dish. Top with meatballs. Pour remaining sauce over meatballs. Top with shredded Parmesan cheese and Mozzarella cheese. Cover with foil.
Bake for 30 minutes. Remove foil and bake an additional 5 minutes, until cheese is melted.
Serve as is, or with a side of pasta, or on a sub sandwich.
