This garlic spaghetti is great as the main dish or as a side dish. Serve it alone with a salad and garlic bread, or along side chicken. Grilled chicken strips added to the spaghetti would be delicious as well.
2 t. olive oil
4-5 cloves garlic, minced
2 T. butter
1/4 t. salt
1/2 t. pepper
3 c. chicken broth or stock, plus a little extra
1/2 lb. spaghetti, angel hair pasta, or pasta of your choice
1 c. freshly grated Parmesan cheese
3/4 c. heavy cream
1 1/2 T. dried parsley
In a medium pan, heat olive oil over medium heat. Add garlic and stir for 1 to 2 minutes. Add butter and melt, stirring constantly. Add salt, pepper, and 3 cups chicken broth/stock. Bring to a boil.
Add pasta and cook according to package directions. If the noodles start to stick to the bottom and burn, add a little more broth/stock.
When the pasta is cooked to your desired tenderness, add cheese, cream, and parsley and mix thoroughly. Serve immediately.
