Crockpot Chicken Stroganoff with Country Gravy

What could be better than a chicken stroganoff with country gravy over egg noodles? Nothing! What makes it even better is that it is made in the crockpot. It is so easy!

Ingredients

4 - 5 boneless, skinless chicken breasts
1- 10.5 oz. can cream of mushroom soup
1- 8 oz. package cream cheese
1-2.75 oz. packet country gravy mix
2-21/2 c. chicken broth or chicken stock
16 oz. sour cream
egg noodles
salt and pepper, to taste

Line crockpot with a crockpot liner for easy clean up and then spray the liner with non-stick cooking spray.

Add chicken breasts and top with cream of mushroom soup. Cut cream cheese into cubes and add to chicken. Mix country gravy mix from packet with the chicken broth. Stir. Add it to the soup and cream cheese mixture. Add salt, pepper to taste. Stir.

Cook on low for 6-8 hours. (8 hours if the chicken was frozen.)

Stir once or twice throughout the day if possible, to mix all the ingredients.

About 20 minutes before eating, prepare the egg noodles. While the noodles are boiling, add about 3/4 of the 16 oz. container of sour cream to the chicken. Mix well, but try not to completely break up the chicken while mixing.

Drain noodles and add to chicken, stirring to mix well.

Serve. Top each serving with a dollop of sour cream.
