Make your favorite restaurant chicken and dumplings at home in the comfort of your own home. With just a few ingredients and a little time, you can make this delicious dinner. Add a salad and your favorite veggie for a complete meal.
3 -6 lb. frying chickens
2 qt. water
2 t. salt
1/2 t. freshly ground black pepper
2 c. all-purpose flour
1/2 t. baking soda
1/2 t. salt
3 T. shortening
3/4 c. buttermilk ( Ior add 1 T. vinegar to 1 c. milk, let sit 5 minutes, then measure 3/4 c.)
Place chicken in a Dutch oven, add water and the salt, bring to a boil.
Cover, reduce heat, and simmer 1 hour or until tender, until it almost falls off of the bone.
Remove chicken from the broth and cool. Bone the chicken and cut it into bite-sized pieces. Set aside.
Bring the broth to a boil and add pepper.
Combine flour, baking soda, and salt. Cut in the shortening. Add the buttermilk, stirring with a fork until moistened.
Knead dough 4 to 5 times, never done, and pat to 1/2 inch pieces and drop into boiling broth. Reduce heat to medium-low, and cook for about 8 - 10 minutes, stirring occasionally.
Stir in the chicken and serve.
