Hashbrown Mexican Taco Casserole

Your family probably loves hashbrown casserole and they love tacos as well. Pair the two together with this wonderful hashbrown taco casserole. It has ground beef, hash browns, cheese, sour cream and taco seasonings, which make it so yummy!

Ingredients

1 lb. lean ground beef
½ c. onion, finely chopped
2-3 cloves garlic, minced
1T. chili powder
1 t. ground cumin
¾ c. tomato sauce
5 cherry tomatoes, cut in half
1 lb. shredded hash brown potatoes
½ c. sour cream
½ c. milk
1 ½ -2 T. Ranch dressing mix
Velveeta cheese or shredded Cheddar cheese

Preheat oven to 350 degrees. Grease a small casserole dish.

Brown beef and onion in a skillet/pan. When beef is browned, add garlic, chili powder, cumin, and tomato sauce. Mix well and simmer for 5 minutes.

In a separate bowl, whisk together milk, sour cream, and Ranch dressing mix.

Place hash browns in the casserole dish. Pour the milk mixture evenly over the hash browns. Mix in the hash brown mixture with the ground beef mixture.

Top casserole with thin slices of Velveeta Cheese or shredded cheese and the cherry tomatoes.

Bake uncovered for 20-25 minutes.
