These delicious salmon fillets are marianated in Irish whiskey which has a peppery taste and honey which gives it a nice glaze.
3-4 T. honey
3-4 T. lemon juice
1-2 t. lemon zest
¼-1/2 c. Irish whiskey
2-4 t. chopped fresh thyme
2 -4 T. extra virgin olive oil
sea salt, to taste
freshly ground black pepper, to taste
4 salmon fillets
1 T. butter
1-2 t. chopped fresh thyme
Mix together honey, lemon juice, lemon zest, whiskey, thyme, and oil in a large zip lock bag. Add salmon and marinate 4-6 hours in the refrigerator.
Preheat oven to 450 degrees.
Remove salmon from marinade. Place on a foil lined sheet pan. Sprinkle with sea salt and freshly ground pepper.
Place marinade in a small saucepan and simmer for 4-5 minutes or until reduced to half the volume. The mixture should be syrupy. Add butter and stir until butter is melted. Add the chopped fresh thyme.
Roast salmon for 10-12 minutes, basting with the sauce halfway through.
Place under broiler for the last few minutes, if you want a more golden exterior.
Transfer to serving plates or platter and then drizzle with the sauce.
