This will quickly become one of your favorite meals for you and your family. It is simple and quick to prepare. More importantly, it is delicious.
8 oz. pasta, your choice (spaghetti, penne, egg noodles etc.)
5 T. butter, divided
3 large cloves garlic, minced
onion salt, powder or flakes, if desired
8 oz. baby white mushrooms, sliced
3 c. cooked chicken, chopped (rotisserie chicken works well)
2 T. all-purpose flour
2 c. chicken broth or stock
1 c. heavy cream
1/4 - 1/2 t. kosher salt, or as needed
1/8 t. ground nutmeg
1/4 t. freshly ground black pepper
1/2 c. shredded Parmesan cheese
Preheat oven to 350 degrees. Grease a 9x13 inch baking dish.
Cook and drain pasta, according to package directions.
Melt 3 T. butter in a large skillet over medium-high heat. Add garlic and mushrooms, cook for 3-5 minutes until browned, stirring occasionally. Add chicken, toss to coat and remove from the heat.
Melt 2 T. butter in a saucepan over medium heat. Whisk flour into melted butter, then slowly add the chicken broth/stock , whisking to combine. Increase heat to medium-high and bring to a simmer. Cook 2 minutes and then add the cream. When sauce begins to simmer again, reduce heat to medium. Simmer on low, stirring constantly for 8-10 minutes. The sauce will thicken slightly as it cooks. Season to taste with onion powder, nutmeg, salt and pepper.
Place cooked pasta in a baking dish. Spread chicken mixture on top of it. Pour the sauce over all to coat thoroughly. Sprinkle with cheese.
Bake 20 minutes, until sauce is bubbling and the cheese has melted.
