This is a great meatless dish to make on a weeknight because it is fast and delicious. Salmon is healthy and using non-fat sour cream and skim milk help the dish stay healthier.
12 oz. fettuccine, uncooked or your favorite pasta
1 T. butter
1 large clove garlic, minced
1 T. all-purpose flour
1 c. skim milk
1 c. grated Parmesan cheese
1/3 c. non-fat sour cream
1 T. chopped fresh dill
1 pinch ground nutmeg
8 oz. smoked salmon, cut into bite-sized pieces
Cook fettuccine according to package directions; drain. Place in a large bowl. Keep warm.
White fettuccine is cooking, melt the butter in a saucepan over low heat. Add garlic; cook 30 seconds. Add flour, stirring constantly. Gradually stir in milk; cook, stirring constantly, until thickened.
Add cheese and sour cream; cook and stir until cheese melts. Stir in dill and nutmeg. Set aside and keep warm.
Add salmon and sauce to the cooked fettuccine. Toss well. Serve immediately.
