This is a delicious one pot vegetarian meal that will please the whole family or even guests. Put first 8 listed ingredients in the pot, cook, garnish and you are ready to eat.
4-1/2 c. water
3 T. olive oil
1 lb. farfalle (bow tie) pasta
1 pint grape or cherry tomatoes, halved
½ c. basil leaves, packed
4 garlic cloves, minced
salt, to taste
freshly ground black pepper, to taste
1-1/2 c. part skim shredded Mozzarella cheese
fresh mozzarella cheese balls
fresh basil leaves, chopped for garnish
freshly grated Parmesan cheese, for garnish, optional
Combine water, olive oil, pasta, halved tomatoes, basil leaves, garlic, salt and pepper in a large stock pot. Cook over high heat and bring to a boil.
Reduce heat to a simmer. Cook 11 to 12 minutes, or until pasta is thoroughly cooked and water reduced, stirring occasionally.
Remove from heat; let stand 2 minutes. Stir in shredded Mozzarella cheese; stir until thoroughly combined. Taste for salt and pepper; adjust accordingly.
Garnish with balls of fresh mozzarella cheese and fresh basil. Garnish with grated Parmesan cheese, optional.
Serve immediately.
