Make an easy, delicious pork roast in the crock pot with no fuss and no mess in the crock pot. Serve with gravy and mashed potatoes.
3 lb. pork loin, trimmed and cut little slits all around the pork
2 t. garlic powder
½ t. ground ginger
2 t. onion powder
½ t. kosher salt
½ t. dried thyme
1/4 t. freshly ground black pepper
2 T. olive oil
2 c. chicken broth or stock
2 T. lemon juice
2 T. soy sauce
3 T. cornstarch, dissolved in 3 T. water
salt and pepper, to taste
In a small bowl, combine garlic powder, ground ginger, onion powder, salt, thyme, and pepper. Stir to combine. Rub seasoning all over the entire surface of the pork loin.
Heat oil in a large skillet until very hot. Brown pork loin on all sides.
Line a crock pot with a crock pot liner for easy clean up.
Place the pork loin in the crock. Add chicken broth, lemon juice, and soy sauce in a small bowl and stir to combine, then pour it over the pork. Cover and cook on Low for 7-8 hours.
When finished cooking, baste the pork loin and transfer the pork to a plate to keep warm.
Pour all of the liquid from the slow cooker into the same skillet used earlier. Slowly add dissolved cornstarch, stirring constantly on medium heat, until sauce turns thick and gravy-like. Season with additional salt and pepper, if desired.
Serve roast with the gravy and mashed potatoes, if desired.
