This is a much healthier option for meatloaf than the typical recipe. Use the leftovers for meatloaf sandwiches, that is, if you have any!
1 lb. ground turkey
2 T. olive oil
1 small onion, diced
5 cloves garlic, minced
1 egg, lightly beaten
1/2 c. panko or breadcrumbs
1/2 c. milk
1 T. tomato paste
1 1/2 t. Italian seasoning
1 t. salt
1/2 t. freshly ground black pepper
1/4 c. ketchup
cooking spray
Preheat oven to 350 degrees.
In a small skillet, heat olive oil over medium-low heat. Add onion and garlic, and saute for 5-7 minutes, until everything begins to caramelize. Remove from heat.
While that sautes, combine panko and milk in a bowl; let soak.
When onions and garlic have cooled, combine ground turkey, onion and garlic mixture, panko and milk mixture, egg, tomato paste and seasonings in a large bowl. Stir.
Spray a bread pan with cooking spray, and then place meatloaf into pan. Cook for one hour.
Serves 4
