Use your leftover turkey and vegetables from dinner to make great panini sandwiches for lunch. Prepare the paninis and enjoy immediately or wrap them up for later.
4 slices of your favorite bread, sourdough is good
2 slices leftover turkey meatloaf
any leftover veggies or mashed potatoes
2 slices Provolone cheese or your favorite
butter or margarine for spreading
Butter one side of each slice of bread.
Place meatloaf, cheese and any other desired leftovers between the unbuttered sides of the bread.
Heat a large skillet over medium heat (or use a panini maker). Carefully place sandwiches in skillet. Cook for a few minutes. When the bottoms are golden brown, flip over.
Press down firmly with a spatula on the top of the bread to compress the sandwiches or you can use a lightly sprayed lid from a pot and press down.
Remove. Serve immediately or put in a container or wrap it up to enjoy later. Warm up in a microwave or the oven.
