Description
Use your leftover turkey meatloaf in your breakfast the next day. The meatloaf makes wonderful , individual frittata cups.
Ingredients
- 8 eggs
- 1/2 c. milk
- 1/2 c. Cheddar cheese
- 1/2 t. salt
- 1/4 t. black pepper
- 1 c. crumbled, leftover turkey meatloaf
- 4 T. green onions, chopped
- cooking spray
Steps
- The night before:
- In a large bowl, whisk together eggs, milk, Cheddar cheese, green onions, salt and pepper. Add meatloaf and gently stir together.
- Spray a muffin tin with cooking spray, and divide the meat and egg mixture evenly among the 12 cups. Cover and refrigerate overnight.
