Use your leftover turkey meatloaf in your breakfast the next day. The meatloaf makes wonderful , individual frittata cups.
8 eggs
1/2 c. milk
1/2 c. Cheddar cheese
1/2 t. salt
1/4 t. black pepper
1 c. crumbled, leftover turkey meatloaf
4 T. green onions, chopped
cooking spray
The night before:
In a large bowl, whisk together eggs, milk, Cheddar cheese, green onions, salt and pepper. Add meatloaf and gently stir together.
Spray a muffin tin with cooking spray, and divide the meat and egg mixture evenly among the 12 cups. Cover and refrigerate overnight.
In the morning:
Preheat oven to 350 degrees. When ready, place the muffin tin in the oven. Bake 15-20 minutes, or until tops begin to turn golden.
Makes 12 frittatas.
