Chicken, Green Chilies and Cream Cheese Taquitos

Description

Serve these taquitos as a meal, appetizer or as a snack. Make them a little healthier with low-fat cream cheese and cheddar cheese if you are watching your waistline.

Ingredients

3 c. cooked,shredded chicken (rotisserie is great)
8 oz. cream cheese
2 T. hot sauce, or to taste
1 c. shredded Cheddar cheese
9 oz. canned green chiles
16 six inch flour tortillas
1 c. vegetable oil, for frying
salsa, for serving

Shred chicken with two forks.

Stir shredded chicken with cheeses, hot sauce, and chiles.

Making one flour tortilla at a time, add a few tablespoons chicken mixture to the center of the tortilla. Roll the tortilla up tightly. Repeat.

Preheat oven to 250 degrees.

Add oil to a large skillet over medium heat. When oil is hot, add about four taquitos into the pan with the seam side down so the taquitos seal.

Cook taquitos for 2-3 minutes per side, flipping once.

When cooked, transfer taquitos to the oven while working on the other taquitos.

When all the taquitos are cooked, serve with salsa, if desired.
