Chicken, Green Chilies and Cream Cheese Taquitos

Description

Serve these taquitos as a meal, appetizer or as a snack. Make them a little healthier with low-fat cream cheese and cheddar cheese if you are watching your waistline.

Ingredients

  • 3 c. cooked,shredded chicken (rotisserie is great)
  • 8 oz. cream cheese
  • 2 T. hot sauce, or to taste
  • 1 c. shredded Cheddar cheese
  • 9 oz. canned green chiles
  • 16 six inch flour tortillas
  • 1 c. vegetable oil, for frying
  • salsa, for serving

Steps

  1. Shred chicken with two forks.
  2. Stir shredded chicken with cheeses, hot sauce, and chiles.
  3. Making one flour tortilla at a time, add a few tablespoons chicken mixture to the center of the tortilla. Roll the tortilla up tightly. Repeat.
