These egg rolls make a great side dish or possibly even a lunch. Use your favorite cheese to make them to your own taste.
1 c. prepared mashed potatoes (leftovers are great)
4 T. bacon chopped and crisply cooked (ham would work as well)
3/4 t. garlic powder
salt, to taste
pepper, to taste
6 slices cheese, like Velveeta
nutmeg, to taste
6 egg roll wrappers
dipping sauce, your choice
oil, for frying
Combine cooled mashed potatoes, bacon, garlic powder, salt, pepper and nutmeg in a large bowl. Mix.
Lay each egg roll wrapper out with a corner pointing towards you. Place mashed potato mixture and 1 slice of cheese in the center of each wrapper. Fold in the sides and roll the wrapper tightly.
Use a dab of water to secure the tip of the wrapper.
Preheat oil to 350 degrees. Fry each egg roll for about 4-5 minutes or until browned and crispy.
