Don't waste your time on a boring chicken sandwich. Enjoy a fabulous, easy grilled Hawaiian chicken sandwich instead.
4 boneless skinless chicken breast halves, pounded to an even thickness
Hawaiian marinade OR favorite BBQ sauce
4 sandwich rolls or hamburger buns, your choice of kind
smoked gouda, cheddar, provolone or mozzarella, thinly sliced
fresh pineapple, thinly sliced
lettuce
tomato, thinly sliced
red onion, thinly sliced
bacon, cooked until crisp, optional
mayonnaise, Dijon mustard, or honey-mustard
Hawaiian Marinade:
3 T. soy sauce
3 T. brown sugar
2 T. rice vinegar
1 T. sesame oil
1 t. fresh minced ginger
1 t. fresh minced garlic
cooking spray
Marinade:
Whisk to combine marinade ingredients in a small bowl. Place chicken in a resealable plastic bag and pour the marinade over the chicken. Marinate in refrigerator for at least 2 hours.
Preheat outdoor or indoor grill to medium-high heat. Discard the marinade, if using or brush chicken with BBQ sauce. Lightly grease grill with cooking spray.
Cook chicken until juices run clear, about 5-6 minutes per side. Top chicken with cheese several minutes before it is finished cooking so cheese will melt. Grill pineapple several minutes on each side. If desired, grill insides of tops and bottoms of buns until grill marks appear.
Place the grilled chicken with the melted cheese on a bun. Spread with mayonnaise, Dijon, or honey-mustard, if desired. Top with lettuce, tomato, onion, bacon and pineapple.
