If you need a low carb snack, this is for you! It is simple, easy and really delicious.
1 c. Monterrey Jack cheese, shredded
1 medium jalapeno pepper, thinly sliced
Preheat oven to 350 degrees. Place parchment paper on a cookie/baking sheet. A silicone sheet is not recommended- they will not bake properly.
Using a tablespoon, scoop up 1 T. Monterrey Jack cheese and make a small pile on the parchment. Press it slightly flat. Repeat about 15 more times or until cheese is gone.
Place a slice of jalapeno on top of each pile.
Bake about 10-12 minutes or more until brown and firm enough to pick up without breaking.
Let them completely cool and fully firm up before removing from the pan for best results.
