Spaghetti alla Carbonara

Description

8 oz. pancetta
16 oz. spaghetti
3 eggs
5 T. Pecorino Romano, finely grated
2 cloves garlic, minced
salt, to taste
1 t. pepper
1 T. butter

Cut pancetta into 1/3 inch dice; cook in a skillet over moderate heat in butter, stirring, until golden brown and a little crunchy.

Add minced garlic, cook a little and remove from heat.

Cook spaghetti in boiling well salted water until al dente.

While spaghetti is cooking, whisk the eggs and grated Pecorino Romano with 1 teaspoon coarsely ground black pepper, and a pinch of salt in a small bowl.

Drain spaghetti, then toss it with the pancetta and garlic over moderate heat until coated. Remove from heat and add the egg mixture, tossing well to combine.

Serve immediately with an extra sprinkle of grated Pecorino Romano and black pepper.
