Ingredients
- 8 oz. pancetta
- 16 oz. spaghetti
- 3 eggs
- 5 T. Pecorino Romano, finely grated
- 2 cloves garlic, minced
- salt, to taste
- 1 t. pepper
- 1 T. butter
Steps
- Cut pancetta into 1/3 inch dice; cook in a skillet over moderate heat in butter, stirring, until golden brown and a little crunchy.
- Add minced garlic, cook a little and remove from heat.
- Cook spaghetti in boiling well salted water until al dente.
