Description
Grandma's favorite Italian soup passed down in the family. It can be used as a main dish or a side dish with sandwiches.
Ingredients
- 1 can cannellini beans
- 4 can of vegetable or chicken broth
- 1/2 box of Acini di Pepe
- 2 heads of escarole
- 4 t. or more of minced garlic
- olive oil, just enough to brown the garlic
- salt and pepper to taste
Steps
- 1. Follow the directions on the package to cook Acini di Pepe. Drain and set aside.
- 2. Heat broth in soup pot.
- 3. Clean and cut escarole in bite sized pieces.
