Description

Grandma's favorite Italian soup passed down in the family. It can be used as a main dish or a side dish with sandwiches.

Ingredients

• 1 can cannellini beans
• 4 can of vegetable or chicken broth
• 1/2 box of Acini di Pepe
• 2 heads of escarole
• 4 t. or more of minced garlic
• olive oil, just enough to brown the garlic
• salt and pepper to taste

Steps

1. 1. Follow the directions on the package to cook Acini di Pepe. Drain and set aside.
2. 2. Heat broth in soup pot.
3. 3. Clean and cut escarole in bite sized pieces.
