Grandma's favorite Italian soup passed down in the family. It can be used as a main dish or a side dish with sandwiches.
1 can cannellini beans
4 can of vegetable or chicken broth
1/2 box of Acini di Pepe
2 heads of escarole
4 t. or more of minced garlic
olive oil, just enough to brown the garlic
salt and pepper to taste
1. Follow the directions on the package to cook Acini di Pepe. Drain and set aside.
2. Heat broth in soup pot.
3. Clean and cut escarole in bite sized pieces.
4. Cook in salted water until soft. Vegetable or chicken cubes can be used in the salted water for more flavor.
5. Drain, squeeze extra water out and set aside.
6. Add escarole and garlic to broth, stir.
7. Add cannellini beans, stir then add Acini di Pepe. Stir well.
8. Serve with your favorite grated Italian cheese on top and enjoy!
