A different way to eat your spaghetti! It can be your main dish or used as a side dish.
1 lb. spaghetti or angel hair
1 cup oil
4-5 garlic cloves, peeled and minced
1 to 1 1/2 lbs. broccoli, cooked and cut into bite sized pieces
1/2 cup vegetable or chicken broth
salt and pepper to taste
grated Parmesan cheese
Cook pasta in a large pot of salted boiling water al dente. While pasta is cooking, heat the olive oil in a large pan over medium heat. Saute garlic, add the cooked broccoli, broth, salt and pepper and simmer 5 minutes. Set aside.
Drain pasta and return it to the large pot. Place over the medium heat and mix in the broccoli mixture. Using a wooden spoon, toss till well mixed. Add salt and pepper as needed. Remove from heat and serve, topped with grated cheese.
