Serve with your favorite spaghetti or marinara sauce.
1 lb. lean ground beef
1/2 lb. ground veal
1/2 lb. ground pork
2 eggs
1 cup Parmesan cheese
2 T. chopped Italian parsley
1 garlic clove, peeled and minced
2 cups Italian bread crumbs
2 cups lukewarm water
salt and pepper to taste
1 cup olive oil and a little extra on side in a bowl
Combine meats in a large bowl. Add eggs, cheese, parsley, garlic, salt and pepper to taste. Blend ingredients together with your hands, and then blend in the bread crumbs. Slowly add in water, 1 cup at a time, until it is moist.
Shape mixture into 2-3 inch balls.
Heat olive oil in a large pan till hot but not smoking. Fry meatballs in batches. When bottom of meatballs are brown and crisp, turn and cook on other side. Remove from pan and drain on paper towels.
Put cooked meatballs in your favorite Marinara sauce and cook for 15 minutes. Serve by themselves or over pasta. Grated Parmesan cheese on top will top it off!
Try rubbing a little extra oil on top of meatballs before frying!
