Ingredients
- 36 extra large shrimp, deveined, peeled and butterflied, tails removed
- 1 cup flour
- Seasoned Egg Batter
- 1 1/2 cups bread crumbs
- 1 cup oil
- 1/4 c. Parmesan cheese
- 36 1 oz. pieces of fresh mozzarella cheese
- 2 cups Marinara sauce, your favorite
- 2 T. chopped Italian parsley
- Seasoned Batter
- 4 large eggs
- 1/4 cup freshly grated Parmesan cheese
- 2 t minced Italian parsley
- salt and pepper to taste
Steps
- Seasoned Egg Batter:
- Whisk eggs, cheese, parsley, salt and pepper in a small bowl until blended.
- Dredge each shrimp in flour until well coated and then in the Seasoned Egg Batter. Let extra batter drip off, then dredge the shrimp in bread crumbs until well coated.
