Ingredients

36 extra large shrimp, deveined, peeled and butterflied, tails removed
1 cup flour
Seasoned Egg Batter
1 1/2 cups bread crumbs
1 cup oil
1/4 c. Parmesan cheese
36 1 oz. pieces of fresh mozzarella cheese
2 cups Marinara sauce, your favorite
2 T. chopped Italian parsley

Seasoned Batter
4 large eggs
1/4 cup freshly grated Parmesan cheese
2 t minced Italian parsley
salt and pepper to taste

Seasoned Egg Batter:
Whisk eggs, cheese, parsley, salt and pepper in a small bowl until blended.

Dredge each shrimp in flour until well coated and then in the Seasoned Egg Batter. Let extra batter drip off, then dredge the shrimp in bread crumbs until well coated.
Preheat broiler.
Heat oil in a large pan over medium high heat. When oil is hot but not smoking, add shrimp and fry about 5 minutes or less until brown and crisp. Be careful not to crowd the pan. Fry shrimp in batches.
Using a slotted spoon, remove shrimp to a baking pan with sides. Sprinkle grated cheese on top and place a piece of mozzarella on top of each shrimp. Pour marinara sauce around each shrimp and drizzle a little of the sauce on top.
Broil shrimp for about 5 minutes or until the cheese is golden and bubbles. Serve with parsley on top.
