Chicken Breasts Stuffed with Artichokes, Lemon and goat Cheese

Not your ordinary chicken!

Ingredients

  • 3 T. Italian bread crumbs
  • 2 t. grated lemon rind
  • 1/4 t. salt
  • 1/4 t. black pepper
  • 6 oz. marinated artichoke hearts, drained and chopped
  • 3 oz. herbed goat cheese, softened
  • 4 - 6 oz. skinless, boneless chicken breast halves
  • cooking spray

Steps

  1. Preheat oven to 375 degrees
  2. Combine first 6 ingredients, stir.
  3. Place each chicken breast half between 2 sheets of plastic wrap. Pound to 1/4 inch thick using a meat mallet or rolling pin. Remove plastic wrap. top each breast half with 2 T. cheese mixture and roll up jelly-roll fashion. tuck in the sides and secure each with wooden toothpicks.
