Not your ordinary chicken!
Ingredients
- 3 T. Italian bread crumbs
- 2 t. grated lemon rind
- 1/4 t. salt
- 1/4 t. black pepper
- 6 oz. marinated artichoke hearts, drained and chopped
- 3 oz. herbed goat cheese, softened
- 4 - 6 oz. skinless, boneless chicken breast halves
- cooking spray
Steps
- Preheat oven to 375 degrees
- Combine first 6 ingredients, stir.
- Place each chicken breast half between 2 sheets of plastic wrap. Pound to 1/4 inch thick using a meat mallet or rolling pin. Remove plastic wrap. top each breast half with 2 T. cheese mixture and roll up jelly-roll fashion. tuck in the sides and secure each with wooden toothpicks.
