This is the perfect meal for camping, grilling at home or even just made in the oven. Easy clean up and no dishes make this meal so easy. Serve with your favorite veggie, which could also be grilled.
12 red potatoes, washed
1 1/2 lb. lean ground beef, at least 85% lean
2 eggs
1 1/2 t. Dijon mustard
T T. Worcestershire sauce
1 t. salt
1/2 t. pepper
garlic salt, to taste if desired
seasoned salt, to taste if desired
1/2 c. onion, finely chopped or grated
olive oil
BBQ sauce, steak sauce or ketchup, if desired
Preheat oven to 400 degrees. (could also be made on a grill or when camping)
For each person thinly slice (about 1/8 inch) 2 red potatoes and place in pie pan or on a big piece of foil.
Mix the lean ground beef, eggs, Dijon, Worcestershire sauce, salt and pepper, and chopped onions. Divide into 6 one-inch thick patties.
Top each pan/foil of potatoes with a meat patty and sprinkle the potatoes generously with seasoned salt or garlic salt and pepper, then drizzle with a olive oil, especially over the potatoes.
Cover with foil and bake 35-45 minutes or until potatoes are fork tender.
Serve with BBQ Sauce, steak sauce or ketchup, if desired.
