Make your chicken taste like fried but made healthier in the oven. This recipe provides a crispy crust that is just as good as fried!
1 chicken, cut up into pieces
3 c. all-purpose flour
2 t. garlic pepper
1 t. sugar
2 t. paprika
1 c. buttermilk
2 eggs
1 t. baking powder
3/4 t. baking soda
olive oil
Preheat oven to 350 degrees.
In a baking pan, whisk together flour, garlic pepper, sugar and paprika. In a medium size bowl, whisk together buttermilk, eggs, baking powder and baking soda until smooth.
Dip each piece of chicken into buttermilk mixture, shaking off the excess. Roll in the flour mixture and then dip back into the buttermilk and flour mixture a second time. Place in abaking pan and drizzle with olive oil.
Bake about 50-55 minutes or until chicken is golden.
