Description

Calzones are much like a homemade pizza pocket. They are easy to eat, especially on the run. This one is vegetarian, but you can fill them with your favorite ingredients.

Ingredients

Filling:
2 1/4 c. whole milk Ricotta cheese
3 c. Mozzarella cheese, grated
3/4 c. grated Parmesan cheese
3 egg whites

cornmeal
egg wash = 1 egg + 1 T. water
garlic salt, to taste
dried parsley
marinara sauce, for dipping

Stir together all filling ingredients until smooth. Set aside.

After the dough has risen for about 45 minutes, punch it down and divide the dough into thirds. Divide each third into 4 pieces so there will be 12 equal size pieces.

Preheat oven to 375 degrees. Roll out each piece of dough into an 8 inch circle. Spread an equal amount of cheese filling onto half of the circle. Leave a 1 inch border around the edge. Wet your finger with water and spread onto the border. Fold the dough over the filling; crimp edge with a fork so cheese filling stays inside as it bakes.

Cheese Stuffed Calzones:
Place them on a parchment lined baking sheet that has been sprinkled with a little bit of cornmeal.

Brush the top of the Calzones with an egg wash made from 1 whole egg + 1 tablespoon water. Then, sprinkle the Calzones with some garlic salt and dried parsley.

There is no need to let them rise. They will rise as they bake. Pop them into the pre-heated oven for about 22-25 minutes or until golden. Serve hot with marinara sauce for dipping.
