Cheese Stuffed CalzonesRecipe preview on Faxo
Recipe

Description
Calzones are much like a homemade pizza pocket. They are easy to eat, especially on the run. This one is vegetarian, but you can fill them with your favorite ingredients.
Ingredients
- Filling:
- 2 1/4 c. whole milk Ricotta cheese
- 3 c. Mozzarella cheese, grated
- 3/4 c. grated Parmesan cheese
- 3 egg whites
- cornmeal
- egg wash = 1 egg + 1 T. water
- garlic salt, to taste
- dried parsley
- marinara sauce, for dipping
Steps
- Stir together all filling ingredients until smooth. Set aside.
- After the dough has risen for about 45 minutes, punch it down and divide the dough into thirds. Divide each third into 4 pieces so there will be 12 equal size pieces.
- Preheat oven to 375 degrees. Roll out each piece of dough into an 8 inch circle. Spread an equal amount of cheese filling onto half of the circle. Leave a 1 inch border around the edge. Wet your finger with water and spread onto the border. Fold the dough over the filling; crimp edge with a fork so cheese filling stays inside as it bakes.
