This is a yummy, one dish meal that is easy to make and can be on your table in about an hour. It's full of chicken, rice, broccoli and carrots so it is a complete meal.
3 large chicken breasts, cooked, seasoned, and cubed
½ c. butter, salted
½ large onion, diced
1 1/2 T. garlic, finely minced
½ c. flour, all-purpose
½ c. dry white wine
3 c. chicken broth
½ t. dry mustard
½ t. parsley
½ t. poultry seasoning
3 c. cooked wild rice
1-2 c. cooked basmati rice
2 c. cooked broccoli
1 c. baby carrots
2 c. sharp Cheddar cheese, shredded
2 c. Colby Jack, shredded
Preheat oven to 350 degrees. Spray non-stick cooking spray in a large 10x13 inch baking dish.
Melt butter over medium heat; saute onion until translucent. Add garlic; saute 1 minute. Stir in flour until no lumps remain; cook over low heat for 2-3 minutes, stirring frequently.
Slowly add in wine and broth, whisking to combine. Add in dry mustard, parsley, and poultry seasonings. Cook sauce until thickened; set aside.
Layer in the prepared baking dish: cooked chicken, rice, broccoli, baby carrots, and sauce. Stir in half of the cheeses into the mixture, and then top the casserole with the rest of the cheese.
Bake 30-40 minutes, or until bubbly and heated through.
