If you have ever had Chick-fil-A chicken sandwiches, you know how fantastic they are. Now make them at home in the oven knowing that they are healthier than the restaurant's but just as good. Serve with your favorite fries and extra pickles.
2 boneless, skinless chicken breasts
1/2 c. dill pickle juice
2 eggs
1/2 c. milk
1 c. Panko bread crumbs
2 T. powdered sugar
1 t. paprika
1 t. salt
1/2 t. black pepper
1/2 t. garlic powder
1/2 t. celery salt
1/2 t. dried basil
6 dill pickle chips
Option: 1 t. cayenne pepper and/or 2 t. Tabasco sauce for spicy
Buns (buttered and toasted) and pickle slices
Preheat oven to 375 degrees.
Wrap chicken loosely in plastic wrap; pound gently with the flat side of a meat tenderizer until about ½ inch thick all around.
Marinate in pickle juice for 30 minutes to one hour.
Beat egg with milk in a bowl. Combine bread crumbs, sugar, and spices in another bowl.
Dip each chicken piece into the egg on both sides, then coat in bread crumbs on both sides.
Bake chicken 10-15 minutes, until cooked through. Blot chicken on paper towels and serve on toasted buns with dill pickle chips.
