It is summertime and time for those light salads. Enjoy this one for lunch or a light dinner.
8 c. romaine lettuce, torn, rinsed and patted dry with paper towels
3/4 c. Poppyseed Dressing
8 oz. roasted turkey, slices separated
3/4 c. strawberries, fresh, rinsed, sliced
1/2 c. blueberries, fresh, rinsed
3/4 c. pineapple, fresh, cut into chunks
11 oz. can mandarin oranges, drained
1/3 c. toasted pecans or walnuts, optional
In a large bowl, gently toss lettuce and dressing. Divide among 4 plates.
Top each salad with remaining ingredients. Toss. Garnish with pecans or walnuts, if desired.
