This is the perfect appetizer dip for your summer party, BBQ or get together. But don't just limit it to an appetizer because it is perfect on top of burgers, steaks or chicken!
4 medium to large ripe avocados
1 small yellow or red onion, diced small
1 large jalapeno, finely minced
freshly squeezed juice of 1 large lime
1/2 t. kosher salt, or to taste
dash cayenne pepper, adjust to taste, optional
Peel and chop the avocados into 1/2 inch pieces. Lightly mash with a fork, leaving lots of chunks.
Add the onion, lime juice, salt, and pepper to the mashed avocado. Stir to combine; taste. Adjust lime juice, salt, pepper and cayenne pepper to taste.
Serve immediately or cover tightly and refrigerate until ready to serve.
Makes about 2 cups.
