Description
An entire meal in a sillet in about 30 minutes is what you need for a weeknight meal. This dinner is not just fast, it is delicious as well. Use turkey kielbasa/Polish sausage to make it healthier.
Ingredients
1 lb. red potatoes, cubed
3 T. water
3/4 - 1 lb. smoked kielbasa or Polish sausage, or turkey sausage, cut into 1/ -inch slices
3/4 c. chopped onion
1 1/2 T. olive oil
2 T. brown sugar
2 T. cider vinegar
1 1/2 T. Dijon mustard or mustard of your choice
1/2 t. dried thyme
1/2 t. freshly ground black pepper
4 1/2 c. fresh baby spinach
8 bacon strips, cooked and crumbled

Place potatoes and water in a microwave-safe dish. Cover; microwave on high 4 minutes or until tender; drain.
In a large skillet, saute kielbasa and onion in oil until onion is tender. Add potatoes; saute 3-5 minutes or until kielbasa and potatoes are lightly browned.
Combine brown sugar, vinegar, mustard, thyme and pepper; stir into skillet. Bring to a boil.
Reduce heat; simmer, uncovered, 2-3 minutes or until heated through. Add spinach and bacon; cook and stir until spinach is wilted.
