Bacon Wrapped Cheese and Rice Stuffed Chicken

Description

Stuff those boring chicken thighs with cheeses, sour cream, rice and spices, wrap them with bacon and get ready to eat an amazing chicken dish you won't soon forget.

Ingredients

chicken thighs, boneless, fat trimmed
1 pack bacon
4 oz. cream cheese
1/2-3/4 c. shredded cheddar cheese, reduced fat is fine
1/2 c. sour cream, reduced fat is fine
2 c. cooked rice, leftovers are great (white or brown)
1 - 1 1/2 t. salt
1 t. paprika
1 t. garlic powder
1 t. parsley, fresh or dried
1 t. freshly ground black pepper

Preheat oven to 375 degrees. Spray a shallow baking dish with non-stick cooking spray.

Place cream cheese in a large glass bowl; microwave for 15 seconds, until softened.

Add sour cream, shredded cheese, paprika, parsley, garlic powder, a dash of salt and 1/2 tsp. pepper. Mix well; add rice; mix again. Set aside.

Lay the boneless chicken thighs on a cutting board; season with 1 tsp. salt and 1/2 tsp. pepper.

Spoon rice mixture on each thigh. Roll up chicken; wrap with two slices of bacon per thigh.
Secure with wooden toothpicks that have been soaked in water.


When chicken has been stuffed and wrapped, place it in the prepared baking dish; bake uncovered 35 minutes.

Turn oven up to 500 degrees; cook for 10 more minutes or until bacon is browned and crisp. Remove from oven when done and plate immediately. If you serve it from the baking dish, drain bacon grease first.
