This is a delicious, satisfying soup that can be made in minutes. Serve with a salad or a sandwich.
2 c. vegetables, like broccoli, zucchini or cauliflower, cooked and chopped (fresh or frozen)
1 medium onion, diced small
1 medium carrot, diced small
1 stalk celery, diced small with leaves
1⁄2 c. water
1 t. salt
1⁄2 t. pepper, or to taste
12 oz. chicken broth or vegetable broth
1⁄2 c. half-and-half
Cook vegetables. Set aside.
Simmer onion, carrot and celery in water for 10 minutes or until vegetables are tender.
In a blender, food processor or using an immersion blender, puree all vegetables.
Add salt, pepper, chicken broth and cream.
Heat before serving, but do not boil.
