Description
This is a delicious, satisfying soup that can be made in minutes. Serve with a salad or a sandwich.
Ingredients
- 2 c. vegetables, like broccoli, zucchini or cauliflower, cooked and chopped (fresh or frozen)
- 1 medium onion, diced small
- 1 medium carrot, diced small
- 1 stalk celery, diced small with leaves
- 1⁄2 c. water
- 1 t. salt
- 1⁄2 t. pepper, or to taste
- 12 oz. chicken broth or vegetable broth
- 1⁄2 c. half-and-half
Steps
- Cook vegetables. Set aside.
- Simmer onion, carrot and celery in water for 10 minutes or until vegetables are tender.
- In a blender, food processor or using an immersion blender, puree all vegetables.
