Description

Make your own version of the German Riesling Wine soup with the wonderfully delicious recipe. Let each person decide whether to add some ground cinnamon and ground ginger to their individual portions or not!

Ingredients

4 T. unsalted butter
1 lb. turnips, peeled and grated
3 medium leeks, white and light green parts, washed and sliced
1 medium onion, peeled and diced
2 t. kosher salt
1/4 t. freshly ground black pepper
2 c. Riesling wine
2 c. beef, chicken or vegetable broth/stock
1/2 c. heavy cream
2 T. minced fresh flat-leaf parsley
toasted croutons, homemade or store bought
dashes of ground cinnamon and ground ginger, optional

Melt butter in a large pot; add the turnips, leeks and onion; season with salt and pepper.

Cover; cook the vegetables over medium heat until soft and tender, about 20 minutes, stirring occasionally so they don't brown.

Add the wine to the vegetables; simmer over medium heat to reduce by about one half, about 10 minutes.

In a blender, or using a hand immersion blender, process the soup to a coarsely-textured puree.

Return soup to the pot, add the broth/stock; simmer for 3 - 4 minutes.

Add the cream and continue to simmer for 3 - 4 minutes to thicken slightly.

Serve soup in warmed bowls with a sprinkling of parsley and croutons on top and some ground cinnamon and ground ginger.
