Sirloin Tips with Garlic Mashed Potatoes

Description

Enjoy a tender, juicy sirloin served with a rich gravy and veggies served over garlic mashed potatoes. Serve with a salad and crusty bread, if desired.

Ingredients

2 lb. sirloin beef tips or sirloin steak, cut into pieces
1 c. all-purpose flour
1 t. salt
1 t. freshly ground black pepper
3 T. olive oil
2 T. butter or margarine
1 yellow onion, chopped or sliced
3 carrots, cut into stripes or chunks
2 stalks celery, cut into strips or chunks
4 cloves garlic, minced
1 t. dried oregano
1 t. dried thyme
1 c. beef broth/stock
1/2 c. red wine
1/2 c. cranberry juice
1 package whole white button mushrooms
1/4 c. fresh Italian flat leaf parsley

potatoes:
8 white potatoes, washed, peeled and cut into cubes
5 t. butter or margarine
4 garlic cloves, chopped
1 bunch green onions, chopped
1 c. Mascarpone cheese
1/2 c. milk
1/4 c. grated Parmesan cheese
1 t. salt

1 t. freshly ground black pepper

In a medium sized bowl, mix together flour, salt and pepper.

Dredge beef in the flour; shake off the excess.

In a large pot, brown meat in the oil and butter on all sides. Remove meat from the pan; set aside.

Add onions, carrots, celery and garlic; saute 2 - 3 minutes. Return the meat to the pot.

Season meat with the oregano and thyme; add the broth/stock, wine and cranberry juice; bring to a boil. Reduce heat, cover and simmer for around 1 - 1 1/2 hours until meat is tender. Remove the meat from the pan.

In a separate saucepan, saute mushrooms in a little oil for 3 minutes.

Strain the onion mixture into the saucepan with the mushrooms pushing everything through the strainer. Heat the sauce; reduce by half.

Potatoes:
Place potatoes in a large saucepan; cover with cold water. Bring to a boil, reduce heat and cook until tender., about 15 minutes.

Drain potatoes; return to the pot.

Saute garlic and onions in 2 t. butter until onions are soft.

Toss the onion, garlic mixture, remaining butter, Mascarpone cheese, milk, Parmesan, salt and pepper. Mix thoroughly until all ingredients are well blended.

Serve with the mashed potatoes topped with the beef and sauce. Garnish with parsley, if desired.

Serve with your favorite salad and crusty bread.
