Description
These middle Eastern burgers are traditionally served with lamb, but the American burgers use ground beef. They are served with a spicy, cooling cucumber and yogurt relish.
Ingredients
- 1 lb. lean ground beef
- 1/4 c. minced onion
- 2 garlic clove, minced
- 2 T. finely chopped fresh Italian parsley
- 2 t. finely chopped fresh mint leaves
- 1 t. kosher salt
- 1/2 t. cayenne pepper
- 1/2 t. freshly ground black pepper
- 4 burger buns, ciabatta bread, or your choicecut in half
- Cucumber and Cumin Yogurt Relish
- 6 medium Kirby cucumbers, washed, peeled, halved lengthwise, and seeded
- 1 1/2 t. kosher salt
- 1/4 c. Greek yogurt or sour cream
- 2 T. white or red wine vinegar
- 2 T. finely chopped fresh Italian parsley leaves
- 2 t. finely chopped fresh mint leaves
- 2 t. granulated sugar
- 1 t. whole coriander seed, crushed to a powder
- 1/2 t. ground cumin
- 1/4 t. ground cayenne pepper
Steps
- Combine first eight ingredients( except for the bread and relish) in a large bowl; mix until evenly mixed. Form into 4 patties.
- Heat a grill pan or outdoor grill to medium (about 350°F to 450°F). When the grill is hot, cook the burgers about 10 minutes per side, or until the juices run clear and the patties are firm to the touch.
- Place the burgers on the buns, top with relish, and serve. (Toasted or lightly grilled buns would be wonderful for these patties.)
