Broccoli and Cheese Stuffed Chicken Breasts

Description

Some people, kids included, who don't like broccoli even like these broccoli and cheese stuffed chicken breasts! Use your favorite cheese inside along with broccoli and seasonings to make these wonderful chicken breasts.

Ingredients

3/4 c. seasoned dried bread crumbs or Panko
1 T. grated Parmesan cheese
poultry seasoning, to taste
salt and pepper, to taste
1 egg, beaten
1 T. plus 1 t. butter, melted and cooled
4 skinless, boneless chicken breasts, pounded to 1/4 inch or chicken cutlets already flattened
2 oz. Swiss, Provolone, cheddar or Velveeta cheese, your choice
1/2- 3/4 c. cooked chopped broccoli, fresh or frozen

Preheat oven to 375 degrees. Spray a 13x9x2-inch baking pan with cooking spray; set aside.

On a sheet of waxed paper, combine breadcrumbs, Parmesan cheese and seasonings; set aside.

In a small bowl, using a fork, combine egg and butter, mixing well.

One at a time, dip chicken breasts into egg mixture, then into breadcrumb mixture, coating both sides evenly; repeat procedure with remaining breasts, making sure to use all of egg and crumb mixtures.

On each breast, arrange 1/2 oz. Swiss, Provolone, cheddar or Velveeta cheese, then spoon 2 tablespoons broccoli onto each chicken breast, on 1 end and then roll to enclose filling. Secure with moistened wooden toothpicks, if desired.

Arrange chicken breasts seam side down in prepared baking pan. Bake until chicken is tender, about 40 minutes.
