Make this traditional Chinese side dish at home. You will be amazed at how simple it is. Add shrimp or chicken to make it a complete meal.
3 c. cooked white rice
1 T. sesame oil
1 c. frozen peas and carrots (thawed)...
1 small onion, chopped
1 t. minced garlic
2 eggs, slightly beaten
1/4 c. soy sauce
sliced green onion, optional
shrimp or chicken, optional
On medium-high heat, heat the oil in a large skillet or wok. Add the peas and carrots mix, onion and garlic. Stir-fry until tender.
Lower heat to medium-low; push the mixture off to one side, then pour the eggs on the other side of the skillet; stir-fry until scrambled.
Add the rice and soy sauce; stir together well. Stir-fry until thoroughly heated. Add green onion, chicken or shrimp, if desired.
