Slow Cooker John Wayne Casserole

Description

This makes a wonderful casserole in your slow cooker that everyone, even the kids will love.

Ingredients

2 lb. lean ground beef
1.25 oz. packet taco seasoning
1 lb. package refrigerated biscuits
1/2 c. sour cream
1/2 c. mayonnaise
2 T. flour
14 1/2 oz. can petite diced tomatoes, drained
8 oz. canned diced green chiles
2 c. shredded sharp Cheddar cheese

Preheat oven to 350 degrees. Place parchment paper on a cookie sheet.

Heat a large frying pan on high. Crumble the ground beef into the heated pan. Break up the ground beef and cook for 2 minutes.

Place biscuits on top of the cookie sheet. Bake about 16 minutes or until nice and brown.

Add the taco seasoning to the ground beef; stir and continue to break up the beef chunks.

While beef continues to cook, combine sour cream, mayo and flour in a medium bowl; whisk together until creamy and smooth.

When beef is totally cooked through and nice and brown, drain off excess grease.

Line a 6 quart slow cooker with a slow cooker liner for easy clean up. Spray the liner with non-stick cooking spray.

Place as many biscuits on the bottom of the slow cooker to make one layer. Cut any extra biscuits into quarters and fit them carefully to fill any gaps in the biscuit layer.

Place cooked and drained ground beef evenly over the top of the biscuit layer. Evenly spoon diced tomatoes over the top of the ground beef.

Evenly spread green chiles over the tomatoes.

Spread the sour cream/mayo mixture evenly over the top of the green chiles.

Sprinkle the shredded cheese over the top.

Cover; cook on High 2 - 3 hours or on Low for 4 - 6 hours.

Serve using a long handled spoon to get deep down through all the layers.
