6 ingredients and a little bit of time will get you a great, easy main dish. This chicken can be made in the skillet or on the grill. Serve with your choice of veggies.
2 T. olive oil
1 T. Italian seasoning (or oregano, thyme, basil and garlic powder)
1/2 t. salt
1/4 t. pepper
1/4 t. red pepper flakes
2 boneless skinless chicken breasts
In a medium bowl, mix 1 tablespoon oil, Italian seasoning, salt and red pepper flakes. Add chicken breasts; coat evenly on all sides. Let stand at room temperature 10 minutes, turning occasionally.
In a 10-inch skillet, heat remaining oil over medium-high heat. Add chicken; cook 10 - 12 minutes, turning once. If chicken is browning too quickly, reduce heat. Chicken is done when juice of chicken is clear when center of thickest part is cut (at least 165°F).
** Can also be made on the grill.
Transfer to a cutting board. Let stand 5 minutes; cut into 1/4 inch slices.
